Halloum Cucumber Rolls

Makes 18
Preparation time: 15 minutes
2 large Lebanese cucumbers
8 large red cherry tomatoes
100 g of Halloum
2 tablespoons Pesto Sauce

Directions

  • Using a mandoline slicer, slice the cucumbers length wise. Each cucumber will make around 9 slices
  • CutĀ each cherry tomato into 4 lengthwise slices
  • ChopĀ the Halloum into approximately 3*2*0.25 cm rectangles
  • Lay open one slice of cucumber, spread a little bit of pesto sauce on top
  • Place one halloum cube in the center, top it with a tomato, repeat once then fold the cucumber and fasten it with a regular or decorated toothpick
  • You can serve these rolls with crackers or home-baked bread
